A RESOLUTION honoring Roy Trimble upon the occasion of his retirement. 1
WHEREAS, Roy Trimble is retiring after a rewarding and esteemed career in the 2
food service industry spanning five decades, starting in the 1970's when he was a child 3
working for the family-owned Dixie Cafe, a local diner in Paducah, Kentucky, before 4
working for his father's Trimble's Barbeque; and 5
WHEREAS, as an adult in 1985, Roy Trimble purchased Little Castle, one of the 6
oldest restaurants in Paducah, with roots dating back to the Great Depression; and 7
WHEREAS, in 1999, Roy Trimble opened a second Little Castle in Lone Oak, 8
Kentucky, operating both restaurants until 2000 before making the Lone Oak location the 9
sole Little Castle; and 10
WHEREAS, the Lone Oak Little Castle became a staple of the community and a 11
gathering place for locals to eat a delicious breakfast and enjoy a hot coffee while 12
debating politics or solving the problems of the world; and 13
WHEREAS, Little Castle became an important place for elected officials to better 14
understand their constituents and a crucial campaign stop for everyone from local 15
candidates to United States presidential candidates; and 16
WHEREAS, Roy Trimble earned a reputation as being a strong supporter of first 17
responders and military personnel, often providing them with free meals, and was 18
honored by the Military Order of the Purple Heart Chapter 585 (Four Rivers) for his 19
restaurant's dedication and support of the nation's combat wounded veterans and their 20
families; 21
NOW, THEREFORE, 22
Be it resolved by the Senate of the General Assembly of the Commonwealth of 23
Kentucky: 24
Section 1. The members of the Senate hereby recognize and applaud the 25
accomplishments of Roy Trimble for his rewarding and esteemed career, congratulate 26
