Abstract: Provides relative to preparation of cane syrup in the traditional manner for public
consumption.
Present law provides that neither the state Sanitary Code nor any code, law, or regulation
providing requirements relative to commercial food preparation shall apply to the preparation of
jellies, preserves, jams, honey, honeycomb products, cakes, and cookies in the home for sale. 
However, provides special restrictions on preparation of cakes and cookies.  Provides further that
the exception to food preparation regulations shall not apply to any home-based food preparer
whose gross annual sales equal $20,000 or more.
Proposed law retains present law and extends application of the exception to food preparation
regulations to home-based preparers of cane syrup for sale.  Provides that for the purposes of
proposed law, with respect to preparation of cane syrup, "the home" shall mean, in addition to a
dwelling, an open-sided structure on private property that shelters a cast iron kettle, evaporator,
or other equipment for preparing cane syrup in the traditional manner.
