No. 200 R E S O L U T I O N WHEREAS, Taco Olé in Mission is celebrating its 50th anniversary in 2023; and WHEREAS, In 1973, four years after their marriage, Mission natives Elias Bazan Jr. and Delia Bazan established Taco Olé downtown, using knowledge gained from an earlier venture in McAllen; members of both sides of their family helped to build the business, working at breakfast, lunch, and dinner; and WHEREAS, "Welo," Mr. Bazan's father, opened the restaurant at 5 a.m., serving coffee to oilfield workers and city employees headed to their jobs; many cooks contributed to the restaurant's reputation for offering authentic Mexican food, including enchiladas and family-sized botanas, but the tortillas made by "Mommie Rosa," Mrs. Bazan's mother, became especially well known; and WHEREAS, In 1986, the Bazans constructed a new building on North Conway; over the years, the couple made the restaurant a family tradition, and they mentored not only cousins, nieces, and nephews, but also customers' children looking to enter the hospitality industry; and WHEREAS, Taco Olé has been featured on local television news during Hispanic Heritage Month, and Texas Monthly magazine has listed it as one of the state's best Mexican restaurants; today, it has locations in Edinburg and the Sharyland area as well as in Mission; and WHEREAS, Family owned and operated restaurants contribute to both the culinary culture and the economic prosperity of the Lone Star State, and those enterprises that build a record of dependability and longevity enjoy a special degree of esteem in their communities; now, therefore, be it RESOLVED, That the House of Representatives of the 88th Texas Legislature hereby congratulate Taco Olé on its 50th anniversary and that all those associated with this noteworthy establishment be extended sincere best wishes for continued success; and, be it further RESOLVED, That an official copy of this resolution be prepared for Taco Olé as an expression of high regard by the Texas House of Representatives.
