SENATE RESOLUTION NO. 472 In Memory of Jose Enrique Alejos WHEREAS, The Senate of the State of Texas honors and commemorates the life of Jose Enrique Alejos, who died on February 8, 2025, at the age of 85; and WHEREAS, Born on September 18, 1939, Jose Alejos lived a full and meaningful life shaped by his deep love for his family, his entrepreneurial spirit, and his commitment to his community; and WHEREAS, Mr. Alejos was the proud founder and owner of Hamburger King Restaurant, an Edinburg institution that has served the community for more than 50 years; under his leadership, the restaurant became not only a beloved destination for delicious cuisine, especially his renowned chicken, but also a popular gathering place where community ties were strengthened and countless fond memories were made; and WHEREAS, Noted for his warmth and his personable and friendly nature, Mr. Alejos welcomed customers to his restaurant as if they were family and took great pride in creating an inviting atmosphere; his uncompromising work ethic, his commitment to quality, and his thoughtful and compassionate demeanor helped to shape the business into a pillar of the community that continues to enrich the cultural fabric of Edinburg; and WHEREAS, In addition to the great reward Mr. Alejos found as a business owner, he was passionate about the sport of boxing and was well known for promoting local boxing talent; he donated his time and energy to better his community and was dedicated to mentoring young people, and he generously volunteered his efforts to support such organizations as the Boys and Girls Club of Edinburg; and WHEREAS, Jose Alejos was a beloved patriarch, and his children and grandchildren were a source of immeasurable pride and joy to him; he relished gathering the family to share his favorite classic films, lively conversation, and family stories that spanned generations, and he especially cherished spending time with his grandchildren and enjoying their playful antics; and WHEREAS, Jose Alejos leaves behind a legacy of hard work and dedication, wisdom, compassion, and service to his community; the example he set through his enthusiasm for living each day to the fullest will continue to inspire all who knew him, and his memory will be forever treasured by his many loved ones; now, therefore, be it RESOLVED, That the Senate of the State of Texas, 89th Legislature, hereby extend sincere condolences to the bereaved family of Jose Enrique Alejos; and, be it further RESOLVED, That a copy of this Resolution be prepared for his family as an expression of deepest sympathy from the Texas Senate and that when the Senate adjourns this day, it do so in memory of Jose Alejos.
