| 10 | 10 | | culinary culture by recognizing outstanding Latino chefs from |

| 11 | 11 | | across Texas and from around the nation and the world; the awards |

| 12 | 12 | | pay tribute to the authenticity, variety, creativity, and overall |

| 13 | 13 | | excellence of each honoree's contributions to this vital heritage; |

| 15 | 15 | | WHEREAS, Leopoldo "Polo" Becerra started at the Post Oak |

| 16 | 16 | | Grill in Houston as a sous chef in 1990, worked his way up to |

| 17 | 17 | | executive chef, and purchased the restaurant in 2002; more |
|---|
| 18 | 18 | | recently, he has opened a new restaurant, Polo's Signature, where |

| 19 | 19 | | he blends New American cooking with Latin and Asian influences; and |
|---|
| 20 | 20 | | WHEREAS, The diversity and innovative spirit of Latino |

| 21 | 21 | | cuisine contribute greatly to American culture overall, and Mr. |

| 22 | 22 | | Becerra merits special acclaim for his achievements and for setting |
|---|
| 23 | 23 | | an outstanding example for the next generation of Latino chefs; |

| 24 | 24 | | now, therefore, be it |

| 25 | 25 | | RESOLVED, That the House of Representatives of the 81st Texas |

| 26 | 26 | | Legislature hereby congratulate Polo Becerra for winning the State |
