11 SENATE RESOLUTION NO. 604
22 WHEREAS, The Senate of the State of Texas is pleased to
33 recognize the Rio Grande Valley Cook-Off at PalmFest in McAllen
44 as a Texas State Barbecue Championship competition; and
55 WHEREAS, The cook-off is supported by the City of McAllen
66 and by the annual PalmFest International Folklife Celebration;
77 PalmFest is held the first full weekend in October in McAllen and
88 attracts over 30,000 people to the City of Palms; and
99 WHEREAS, One of the oldest and longest running cook-offs in
1010 the state, the Rio Grande Valley Cook-Off has its origin in the
1111 Fajita Cook-Off, which was first held in the Valley in 1976; and
1212 WHEREAS, In 2007, the Fajita Cook-Off was expanded to
1313 include barbecue; the barbecue competition was sanctioned by the
1414 International Barbeque Cookers Association, and the event became
1515 a major attraction at PalmFest; and
1616 WHEREAS, Texans are noted for their affinity for barbecue,
1717 and the Rio Grande Valley Cook-Off at PalmFest brings people
1818 together to sample the wares of some of the best chefs in the
1919 state; now, therefore, be it
2020 RESOLVED, That the Senate of the State of Texas, 81st
2121 Legislature, hereby extend congratulations to the citizens of
2222 McAllen for hosting the Rio Grande Valley Cook-Off at PalmFest,
2323 now a Texas State Barbecue Championship competition, and extend
2424 best wishes for the future to all associated with the event; and,
2525 be it further
2626 RESOLVED, That a copy of this Resolution be prepared in
2727 honor of the Rio Grande Valley Cook-Off.
