| 2 | 2 | | WHEREAS, The Senate of the State of Texas is pleased to |

| 3 | 3 | | recognize the Rio Grande Valley Cook-Off at PalmFest in McAllen |

| 4 | 4 | | as a Texas State Barbecue Championship competition; and |
|---|
| 5 | 5 | | WHEREAS, The cook-off is supported by the City of McAllen |
|---|
| 6 | 6 | | and by the annual PalmFest International Folklife Celebration; |
|---|
| 7 | 7 | | PalmFest is held the first full weekend in October in McAllen and |
|---|
| 8 | 8 | | attracts over 30,000 people to the City of Palms; and |
|---|
| 9 | 9 | | WHEREAS, One of the oldest and longest running cook-offs in |
|---|
| 10 | 10 | | the state, the Rio Grande Valley Cook-Off has its origin in the |
|---|
| 11 | 11 | | Fajita Cook-Off, which was first held in the Valley in 1976; and |
|---|
| 12 | 12 | | WHEREAS, In 2007, the Fajita Cook-Off was expanded to |
|---|
| 13 | 13 | | include barbecue; the barbecue competition was sanctioned by the |
|---|
| 14 | 14 | | International Barbeque Cookers Association, and the event became |
|---|
| 15 | 15 | | a major attraction at PalmFest; and |
|---|
| 16 | 16 | | WHEREAS, Texans are noted for their affinity for barbecue, |
|---|
| 17 | 17 | | and the Rio Grande Valley Cook-Off at PalmFest brings people |
|---|
| 18 | 18 | | together to sample the wares of some of the best chefs in the |
|---|
| 19 | 19 | | state; now, therefore, be it |
|---|
| 20 | 20 | | RESOLVED, That the Senate of the State of Texas, 81st |
|---|
| 21 | 21 | | Legislature, hereby extend congratulations to the citizens of |
|---|
| 22 | 22 | | McAllen for hosting the Rio Grande Valley Cook-Off at PalmFest, |
|---|
| 23 | 23 | | now a Texas State Barbecue Championship competition, and extend |
|---|
| 24 | 24 | | best wishes for the future to all associated with the event; and, |
|---|
| 25 | 25 | | be it further |

| 26 | 26 | | RESOLVED, That a copy of this Resolution be prepared in |
