| 7 | 7 | | foods, and our state has put its brand on breakfast with a versatile |

| 8 | 8 | | item that is beloved from the Panhandle to the Rio Grande: the |

| 9 | 9 | | breakfast taco; and |
|---|
| 10 | 10 | | WHEREAS, The taco has been one of the fundamental building |
|---|
| 11 | 11 | | blocks of Mexican cuisine for well over a century and possibly much |
|---|
| 12 | 12 | | longer; using savory breakfast foods such as eggs and potatoes as |
|---|
| 13 | 13 | | taco fillings was a natural idea, and an account of pairing bacon |
|---|
| 14 | 14 | | with a tortilla dates to the 1850s in a chronicle of a Texas to |
|---|
| 15 | 15 | | California cattle drive; references in the press to tacos eaten for |
|---|
| 16 | 16 | | breakfast are found beginning in the mid-20th century: in May 1959, |
|---|
| 17 | 17 | | the San Antonio Express and News reported on a taco shop on the West |
|---|
| 18 | 18 | | Side that featured egg tacos, and the El Paso Herald-Post reported |

| 30 | 30 | | writers and restaurateurs have claimed that Austin originated the |

| 31 | 31 | | term "breakfast taco," if not the food itself, which has led to an |

|---|
| 37 | 37 | | includes a tortilla and is eaten for breakfast, the breakfast taco |

| 38 | 38 | | can range from the simplest (tortilla and egg) to the traditional |
|---|
| 39 | 39 | | (tortilla and machacado con huevo) to the innovative (tortilla, |
|---|
| 40 | 40 | | eggs, and hot dogs) to the most extravagant (tortilla plus whatever |

| 41 | 41 | | else is on the menu), and it can be enjoyed in every corner of the |

| 42 | 42 | | state; and |

| 43 | 43 | | WHEREAS, Whether purchased at a drive-through in Fort Worth, |

| 44 | 44 | | ordered at a restaurant in Corpus Christi, or served by a loving |
|---|
| 45 | 45 | | grandmother in Del Rio, the breakfast taco has become a signature |
|---|
| 46 | 46 | | Texas food on a par with barbecue and chicken-fried steak, and it is |

| 47 | 47 | | enjoyed by countless residents of the Lone Star State each morning |
|---|
| 48 | 48 | | as the perfect way to start their day; now, therefore, be it |
|---|
| 49 | 49 | | RESOLVED, That the 85th Legislature of the State of Texas |
|---|
| 50 | 50 | | hereby designate the breakfast taco as the official state breakfast |
|---|
| 51 | 51 | | item of Texas. |
