H.R. No. 1544
R E S O L U T I O N
WHEREAS, Locally owned businesses play an essential role in
the vitality and well-being of their communities, and Lucy's Tacos
in Robstown is one such enterprise; and
WHEREAS, This notable restaurant was established in 1994 by
Lucia Rodriguez and her husband, Ramiro Rodriguez, who was
instrumental in the development of the business prior to his
passing in 2016; originally operated out of a van, Lucy's Tacos is
today housed in a building on Western Avenue; and
WHEREAS, The eatery serves up a selection of hearty Mexican
fare to hungry customers during the day, and over the years, its
breakfast tacos have become a particular favorite among faithful
patrons; and
WHEREAS, By offering good food in a comfortable and welcoming
setting, Lucy's Tacos remains a cherished local institution, and
the continuing hard work of Lucia Rodriguez and her employees
indeed merits special recognition; now, therefore, be it
RESOLVED, That the House of Representatives of the 85th Texas
Legislature hereby commend Lucy's Tacos on more than two decades of
service to the Robstown community and extend to Lucia Rodriguez and
her staff sincere best wishes for the future; and, be it further
RESOLVED, That an official copy of this resolution be
prepared for Ms. Rodriguez as an expression of high regard by the
Texas House of Representatives.
