7 | 7 | | Brownsville, from the Rio Grande to the Red River, Texans consume a |

8 | 8 | | lot of tacos, and most of the other foods Texans enjoy, including |

9 | 9 | | brisket, sausage, eggs, chorizo, beans, and seafood, are that much |

10 | 10 | | better when served in the warm embrace of a tortilla; and |

11 | 11 | | WHEREAS, While the exact origins of the taco are uncertain, |
---|
12 | 12 | | this staple of Mexican cuisine is thought to have been around at |
---|
13 | 13 | | least as long as the Lone Star State, and it has been wholeheartedly |
---|
14 | 14 | | adopted as a mainstay of Texas dining; and |
---|
15 | 15 | | WHEREAS, Texans have strong opinions about whether flour or |
---|
16 | 16 | | corn tortillas reign supreme, and as far as fillings go, we delight |
---|
17 | 17 | | in such traditional choices as pork al pastor, beef barbacoa, and |
---|
18 | 18 | | chicken fajita, and we also appreciate the more exotic ingredients |
---|
19 | 19 | | that have been pressed into service, including everything from |
---|
20 | 20 | | octopus to elk to kimchi fried rice; our state is believed to be the |
---|
21 | 21 | | birthplace of the breakfast taco, and although Texans have yet to |
---|
22 | 22 | | arrive at a consensus regarding which region deserves recognition |
---|
23 | 23 | | for the best breakfast tacos, we are happy to indulge in the |
---|
24 | 24 | | spirited debate and taste testing related to this serious issue; |
---|
25 | 25 | | and |
---|
26 | 26 | | WHEREAS, One thing Texans can agree on is that, despite the |
---|
27 | 27 | | availability of tacos in the other 49 states, the tastiest tacos can |
---|
28 | 28 | | be found in the great State of Texas; and |
---|
29 | 29 | | WHEREAS, The Texas Legislature has recognized a variety of |
---|
30 | 30 | | state symbols as tangible representations of the proud character |
---|
31 | 31 | | and colorful heritage of the Lone Star State; while tortilla chips |
---|
32 | 32 | | and salsa make for a satisfying state snack and chili is worthy of |
---|
33 | 33 | | its selection as the official state dish, the taco, which needs no |
---|
34 | 34 | | dish and can be hearty enough to serve as a meal all by itself, is |
---|
35 | 35 | | indeed deserving of a place at the table; now, therefore, be it |
---|
36 | 36 | | RESOLVED, That the 86th Legislature of the State of Texas |
---|
37 | 37 | | hereby designate tacos as the official state food of Texas. |
