SENATE RESOLUTION NO. 362 WHEREAS, The Senate of the State of Texas is pleased to recognize Bigo's Bar and Grill in Brownsville on the occasion of the restaurant's 25th anniversary; and WHEREAS, First established as Sr. Taco, Bigo's began as a fajita restaurant in Matamoros, Tamaulipas, Mexico, and its excellent seasonings and unique recipes soon attracted a loyal customer base; and WHEREAS, The restaurant gained in popularity when it began selling fajitas by the kilo and parrilladas, which are servings of freshly barbecued meats complemented with vegetables and often accompanied by queso flameado; these popular dishes prompted the company to change its name to Bigo's, a spin on bigotón or huge mustache, as a tribute to its distinctive approach to food; and WHEREAS, Over the years, the original Bigo's expanded to include restaurants throughout Mexico and the Rio Grande Valley; the thriving Brownsville location offers patrons an array of affordable border-style specialties in a relaxing atmosphere and the occasional live mariachi performance; and WHEREAS, Bigo's Bar and Grill is a favorite dining spot for residents of Brownsville who enjoy authentic border-town flavors in a warm and welcoming environment, and the restaurant's 25th anniversary is indeed worthy of celebration; now, therefore, be it RESOLVED, That the Senate of the State of Texas, 86th Legislature, hereby commend the owners and staff of Bigo's Bar and Grill in Brownsville for continuing its proud tradition of serving excellent food and congratulate them on the restaurant's 25th anniversary; and, be it further RESOLVED, That a copy of this Resolution be prepared in honor of Bigo's Bar and Grill.
