5	5	WHEREAS, April 2019 marks the 11th anniversary of the death
6	6	of San Antonio restaurateur Viola Barrios, and this occasion
7	7	provides a fitting opportunity to reflect on the life and
8	8	accomplishments of this beloved woman; and
9	9	WHEREAS, Viola Barrios was born in Bustamante, Nuevo León,
10	10	Mexico, to Alfredo and Evangelina Botello, and she grew up with
11	11	the companionship of four sisters, Connie, Mary, Gloria, and
12	12	Irma; after moving to the United States in her early 20s, she
13	13	settled in San Antonio and married the love of her life, Jose
14	14	C. Barrios; the couple shared a rewarding marriage that spanned
15	15	almost two decades before Mr. Barrios was killed in an automobile
16	16	accident in 1975; Ms. Barrios suddenly found herself a single
17	17	parent of three children; and
18	18	WHEREAS, In 1979, with only $3,000 and a passion for
19	19	cooking, Ms. Barrios opened the original Los Barrios Restaurant
20	20	in an old boat garage downtown; for nearly 30 years, she worked
21	21	seven days a week cooking, cleaning, prepping food, bussing
22	22	tables, and doing any other job necessary to help the business
23	23	survive and grow; through her hard work, Los Barrios prospered,
24	24	expanding to a second location and earning national acclaim by
25	25	being featured in numerous publications and television
26	26	programs; and
27	27	WHEREAS, A San Antonio legend, Ms. Barrios was renowned for
28	28	her generosity; she lent a helping hand to those in need and
29	29	returned to Mexico annually to assist the residents of her
30	30	hometown; following her death, the tradition of selfless service
31	31	that she began has been carried on by her three children, Teresa
32	32	Barrios-Ogden, Louis Barrios, and Diana Barrios Treviño, and by
33	33	her many grandchildren; in 2008, they started the Viola's Huge
34	34	Heart Foundation to provide scholarships to low-income students;
35	35	the family has also sponsored dozens of fund-raisers for various
36	36	nonprofit groups and further honored their matriarch by opening
37	37	additional businesses, including the Viola's Ventanas restaurant
38	38	that bears her name; and
39	39	WHEREAS, Throughout her life, Viola Barrios set an
40	40	inspiring example of perseverance, professional achievement, and
41	41	concern for others, and her memory will long be cherished by
42	42	residents of the San Antonio area; now, therefore, be it
43	43	RESOLVED, That the Senate of the State of Texas, 86th
44	44	Legislature, hereby pay tribute to the legacy of Viola Barrios
45	45	and honor her many contributions to her community; and, be
46	46	it further
47	47	RESOLVED, That an official copy of this Resolution be
48	48	prepared for her family as an expression of high regard by the
49	49	Texas Senate.
