55 WHEREAS, April 2019 marks the 11th anniversary of the death
66 of San Antonio restaurateur Viola Barrios, and this occasion
77 provides a fitting opportunity to reflect on the life and
88 accomplishments of this beloved woman; and
99 WHEREAS, Viola Barrios was born in Bustamante, Nuevo León,
1010 Mexico, to Alfredo and Evangelina Botello, and she grew up with
1111 the companionship of four sisters, Connie, Mary, Gloria, and
1212 Irma; after moving to the United States in her early 20s, she
1313 settled in San Antonio and married the love of her life, Jose
1414 C. Barrios; the couple shared a rewarding marriage that spanned
1515 almost two decades before Mr. Barrios was killed in an automobile
1616 accident in 1975; Ms. Barrios suddenly found herself a single
1717 parent of three children; and
1818 WHEREAS, In 1979, with only $3,000 and a passion for
1919 cooking, Ms. Barrios opened the original Los Barrios Restaurant
2020 in an old boat garage downtown; for nearly 30 years, she worked
2121 seven days a week cooking, cleaning, prepping food, bussing
2222 tables, and doing any other job necessary to help the business
2323 survive and grow; through her hard work, Los Barrios prospered,
2424 expanding to a second location and earning national acclaim by
2525 being featured in numerous publications and television
2626 programs; and
2727 WHEREAS, A San Antonio legend, Ms. Barrios was renowned for
2828 her generosity; she lent a helping hand to those in need and
2929 returned to Mexico annually to assist the residents of her
3030 hometown; following her death, the tradition of selfless service
3131 that she began has been carried on by her three children, Teresa
3232 Barrios-Ogden, Louis Barrios, and Diana Barrios Treviño, and by
3333 her many grandchildren; in 2008, they started the Viola's Huge
3434 Heart Foundation to provide scholarships to low-income students;
3535 the family has also sponsored dozens of fund-raisers for various
3636 nonprofit groups and further honored their matriarch by opening
3737 additional businesses, including the Viola's Ventanas restaurant
3838 that bears her name; and
3939 WHEREAS, Throughout her life, Viola Barrios set an
4040 inspiring example of perseverance, professional achievement, and
4141 concern for others, and her memory will long be cherished by
4242 residents of the San Antonio area; now, therefore, be it
4343 RESOLVED, That the Senate of the State of Texas, 86th
4444 Legislature, hereby pay tribute to the legacy of Viola Barrios
4545 and honor her many contributions to her community; and, be
4646 it further
4747 RESOLVED, That an official copy of this Resolution be
4848 prepared for her family as an expression of high regard by the
4949 Texas Senate.
