H.R. No. 1475 R E S O L U T I O N WHEREAS, The Austin community lost an admired business leader with the passing of Güero's Taco Bar founder Rob Lippincott on November 4, 2022, at the age of 74; and WHEREAS, Born on May 16, 1948, in South Bend, Indiana, Rob Lippincott and his family moved around the Midwest before settling in Houston when he was eight years old; in his youth, he gained a reputation for fearlessness by engaging in a variety of dares and stunts, such as performing a backflip off a 25-foot tower and using roller skates and a bedsheet to take advantage of the winds from Hurricane Carla; a natural athlete, he was a superstar competitor on the community swim team and in Little League Baseball, and as a student at Lee High School, he was a letterman on the swim team and became a state champion in track during his senior year; he went on to enroll at The University of Texas at Austin, where he served as president of the Kappa Sigma Tau Chapter, and he played baseball and football for the fraternity's intramural teams; he was later recognized as the Tau Man of the Year and twice received the fraternity's Frank Erwin Award; and WHEREAS, Mr. Lippincott spent the early part of his career working a variety of jobs before he and his wife, Cathy, opened Güero's Taco Bar on East Oltorf Street in 1986; the restaurant relocated in 1995 to the old Central Feed and Seed storefront on South Congress Avenue, and over the years, it has played a vital role in helping to create the distinctive atmosphere that the area is now known for; with its signature Mexican and Tex-Mex cuisine and frequent live music offerings, Güero's has attracted locals and visitors alike, including many politicians and celebrities, and it has been featured in numerous travel shows as well as in the 2014 film Chef; along with his business partners, Mr. Lippincott also developed the South Congress complex that houses such popular spots as Hopdoddy Burger Bar and Perla's Seafood & Oyster Bar; and WHEREAS, In all his endeavors, Mr. Lippincott enjoyed the love and encouragement of his wife, and he took great pride in his two daughters, Lyle and Bette, who joined the family business in 2013; he also had the privilege of welcoming two beloved grandsons, Milo and Theo, into the family; and WHEREAS, Rob Lippincott earned the admiration of all who knew him, not only for his success as a restaurateur and businessman but also for his exceptional warmth and kindness, and he leaves behind a legacy that will resonate for years to come; now, therefore, be it RESOLVED, That the House of Representatives of the 88th Texas Legislature hereby pay tribute to the life of Rob Lippincott and extend heartfelt sympathy to the members of his family: to his wife, Cathy; to his daughters, Lyle and her husband, Josh, and Bette and her husband, Andy; to his grandsons, Milo and Theo; to his siblings, Jack and his wife, Kathy, and Nancy and her husband, Bruce; and to his other relatives and many friends; and, be it further RESOLVED, That an official copy of this resolution be prepared for his family and that when the Texas House of Representatives adjourns this day, it do so in memory of Rob Lippincott.
