| 5 | 5 | | WHEREAS, Taco Olé in Mission is celebrating its 50th |
|---|
| 6 | 6 | | anniversary in 2023; and |
|---|
| 7 | 7 | | WHEREAS, In 1973, four years after their marriage, Mission |
|---|
| 8 | 8 | | natives Elias Bazan Jr. and Delia Bazan established Taco Olé |
|---|
| 9 | 9 | | downtown, using knowledge gained from an earlier venture in |
|---|
| 10 | 10 | | McAllen; members of both sides of their family helped to build the |
|---|
| 11 | 11 | | business, working at breakfast, lunch, and dinner; and |
|---|
| 12 | 12 | | WHEREAS, "Welo," Mr. Bazan's father, opened the restaurant |
|---|
| 13 | 13 | | at 5 a.m., serving coffee to oilfield workers and city employees |
|---|
| 14 | 14 | | headed to their jobs; many cooks contributed to the restaurant's |
|---|
| 15 | 15 | | reputation for offering authentic Mexican food, including |
|---|
| 16 | 16 | | enchiladas and family-sized botanas, but the tortillas made by |
|---|
| 17 | 17 | | "Mommie Rosa," Mrs. Bazan's mother, became especially well known; |
|---|
| 18 | 18 | | and |
|---|
| 19 | 19 | | WHEREAS, In 1986, the Bazans constructed a new building on |
|---|
| 20 | 20 | | North Conway; over the years, the couple made the restaurant a |
|---|
| 21 | 21 | | family tradition, and they mentored not only cousins, nieces, and |
|---|
| 22 | 22 | | nephews, but also customers' children looking to enter the |
|---|
| 23 | 23 | | hospitality industry; and |
|---|
| 24 | 24 | | WHEREAS, Taco Olé has been featured on local television news |
|---|
| 25 | 25 | | during Hispanic Heritage Month, and Texas Monthly magazine has |
|---|
| 26 | 26 | | listed it as one of the state's best Mexican restaurants; today, it |
|---|
| 27 | 27 | | has locations in Edinburg and the Sharyland area as well as in |
|---|
| 28 | 28 | | Mission; and |
|---|
| 29 | 29 | | WHEREAS, Family owned and operated restaurants contribute to |
|---|
| 30 | 30 | | both the culinary culture and the economic prosperity of the Lone |
|---|
| 31 | 31 | | Star State, and those enterprises that build a record of |
|---|
| 32 | 32 | | dependability and longevity enjoy a special degree of esteem in |
|---|
| 33 | 33 | | their communities; now, therefore, be it |
|---|
| 34 | 34 | | RESOLVED, That the House of Representatives of the 88th Texas |
|---|
| 35 | 35 | | Legislature hereby congratulate Taco Olé on its 50th anniversary |

| 36 | 36 | | and that all those associated with this noteworthy establishment be |

| 37 | 37 | | extended sincere best wishes for continued success; and, be it |
