11 | 11 | | WHEREAS, A self-trained chef from Uvalde, Ernest Servantes |

12 | 12 | | began his restaurant career as a dishwasher and busser; he went on |

13 | 13 | | to work as a corporate trainer for Outback Steakhouse and as a cook |
---|
14 | 14 | | for Huisache Grill in New Braunfels, and he later enjoyed a 15-year |

15 | 15 | | tenure as an executive chef with Sodexo, overseeing dining services |

16 | 16 | | at Texas Lutheran University; and |

17 | 17 | | WHEREAS, After honing his barbecue skills on his backyard |

18 | 18 | | grill, Mr. Servantes joined a competitive team, and they entered |

19 | 19 | | and won their first cook-off in 2009; over the succeeding years, |

20 | 20 | | they continued to overcome the competition at local, regional, and |

21 | 21 | | state barbecue contests; he went on to earn national attention with |

22 | 22 | | his victory in a 2012 episode of the Food Network show Chopped Grill |

24 | 24 | | WHEREAS, In 2019, Mr. Servantes and former rival |

25 | 25 | | pitmaster-turned-teammate Dave Kirkland joined forces to launch a |

26 | 26 | | pop-up restaurant, which consistently sold out within an hour of |

27 | 27 | | opening; despite the pandemic, they took their business to the next |

28 | 28 | | level, establishing the brick-and-mortar Burnt Bean Co. in 2020 to |

29 | 29 | | wide acclaim; known for its traditional meats, its Mexican-inspired |

30 | 30 | | sides, and its rotating brunch menu, the eatery has been ranked |

31 | 31 | | among the best barbecue joints in the state by both Texas Monthly |

32 | 32 | | and The New York Times, and it received a Michelin Bib Gourmand |

33 | 33 | | Award in 2024; moreover, Mr. Servantes and Mr. Kirkland were |

36 | 36 | | WHEREAS, Through his inventive and skillful take on a classic |

37 | 37 | | Texas cuisine, Ernest Servantes is elevating Seguin's place on the |

38 | 38 | | culinary map, and he has earned the admiration and appreciation of |

39 | 39 | | his fellow citizens; now, therefore, be it |

40 | 40 | | RESOLVED, That the House of Representatives of the 89th Texas |

41 | 41 | | Legislature hereby honor Ernest Servantes for his contributions as |

42 | 42 | | a pitmaster and restaurateur and extend to him sincere best wishes |

43 | 43 | | for continued success in all his endeavors; and, be it further |
