77 CONCURRENT RESOLUTION
88 WHEREAS, The cattle industry has long been a cornerstone of
99 Texas' agricultural economy, contributing billions of dollars
1010 annually, providing thousands of jobs, and sustaining the state's
1111 vibrant ranching culture; and
1212 WHEREAS, Steak products, particularly prime cuts like the
1313 strip steak, stand as one of the most prominent foods associated
1414 with Texas, a status that reflects the importance of beef
1515 production to the state's history and development; and
1616 WHEREAS, During the late 19th century, rapidly growing urban
1717 centers in the northern and western United States significantly
1818 increased the demand for beef, spurring the era of cattle drives;
1919 Texas ranchers, seeking profitable markets, organized
2020 long-distance drives to transport cattle to railheads and
2121 facilitate the shipment of beef to meet the nation's needs; and
2222 WHEREAS, Today, Texas is the leading producer of beef in the
2323 United States with over 12.2 million head of cattle, more than
2424 double the number in the second-ranking state; the beef industry is
2525 vital to the state's economy, with cattle production accounting for
2626 a significant portion of agricultural output and bringing in
2727 millions of dollars in agricultural export revenue each year; and
2828 WHEREAS, Texas is the birthplace of many iconic culinary
2929 traditions, including those tied to cattle drives, chuck wagons,
3030 and steak houses, all of which have cemented steak as an integral
3131 part of the state's culture and cuisine; the food service industry
3232 is the largest private employer in the state, providing over 1.46
3333 million jobs, including many in steak houses and dining
3434 establishments where high-quality beef remains a central part of
3535 the menu; and
3636 WHEREAS, The New York strip steak is named for New York City,
3737 where it was popularized in local steak houses; however, many of the
3838 strip steaks enjoyed by diners, both historically and in the
3939 present day, came from cattle that were raised on the sprawling
4040 ranches of Texas and should, therefore, be recognized as products
4141 of the Lone Star State; and
4242 WHEREAS, The renaming of the New York strip steak to the Texas
4343 strip steak would be a fitting tribute to the legacy of Texas as the
4444 nation's beef leader, and it would reflect the importance of steak
4545 to the state's identity; now, therefore, be it
4646 RESOLVED, That the 89th Legislature of the State of Texas
4747 hereby express support for renaming the New York strip steak as the
4848 Texas strip steak; and, be it further
4949 RESOLVED, That the Texas strip steak be recognized as a
5050 symbol of Texas' enduring agricultural heritage, the state's
5151 economic vitality, and the contributions of the ranchers, farmers,
5252 and chefs who have shaped the state's iconic food culture; and, be
5353 it further
5454 RESOLVED, That the Texas Legislature encourage all Texans,
5555 restaurants, chefs, and food service establishments to adopt the
5656 name Texas strip steak in honor of the state's beef industry and the
5757 rich culinary history of steak in Texas; and, be it further
5858 RESOLVED, That the Texas Legislature recognize the central
5959 role of the beef industry in driving economic growth, employment,
6060 and cultural pride in Texas; and, be it further
6161 RESOLVED, That the Texas Legislature direct the Texas
6262 Department of Agriculture to promote the Texas strip steak as part
6363 of the state's ongoing efforts to support Texas beef and
6464 agricultural products; and, be it further
6565 RESOLVED, That the Texas secretary of state forward an
6666 official copy of this resolution to the commissioner of the Texas
6767 Department of Agriculture.
