7+ SENATE RESOLUTION
58 WHEREAS, The Senate of the State of Texas honors and
69 commemorates the life of Jose Enrique Alejos, who died on
710 February 8, 2025, at the age of 85; and
811 WHEREAS, Born on September 18, 1939, Jose Alejos lived a
9- full and meaningful life shaped by his deep love for his
10- family, his entrepreneurial spirit, and his commitment to his
11- community; and

1215 WHEREAS, Mr. Alejos was the proud founder and owner of
1316 Hamburger King Restaurant, an Edinburg institution that has
1417 served the community for more than 50 years; under his
1518 leadership, the restaurant became not only a beloved destination
1619 for delicious cuisine, especially his renowned chicken, but also
1720 a popular gathering place where community ties were strengthened
1821 and countless fond memories were made; and
1922 WHEREAS, Noted for his warmth and his personable and
2023 friendly nature, Mr. Alejos welcomed customers to his restaurant
2124 as if they were family and took great pride in creating an
2225 inviting atmosphere; his uncompromising work ethic, his
2326 commitment to quality, and his thoughtful and compassionate
2427 demeanor helped to shape the business into a pillar of the
2528 community that continues to enrich the cultural fabric of
2629 Edinburg; and
2730 WHEREAS, In addition to the great reward Mr. Alejos found
2831 as a business owner, he was passionate about the sport of boxing
2932 and was well known for promoting local boxing talent; he donated
3033 his time and energy to better his community and was dedicated to
3134 mentoring young people, and he generously volunteered his
3235 efforts to support such organizations as the Boys and Girls Club
3336 of Edinburg; and
3437 WHEREAS, Jose Alejos was a beloved patriarch, and his
3538 children and grandchildren were a source of immeasurable pride
3639 and joy to him; he relished gathering the family to share his
37- favorite classic films, lively conversation, and family
38- stories that spanned generations, and he especially cherished
39- spending time with his grandchildren and enjoying their
40- playful antics; and

4144 WHEREAS, Jose Alejos leaves behind a legacy of hard work

4548 and his memory will be forever treasured by his many loved ones;
4649 now, therefore, be it
4750 RESOLVED, That the Senate of the State of Texas, 89th
4851 Legislature, hereby extend sincere condolences to the bereaved
4952 family of Jose Enrique Alejos; and, be it further
5053 RESOLVED, That a copy of this Resolution be prepared for
5154 his family as an expression of deepest sympathy from the Texas
5255 Senate and that when the Senate adjourns this day, it do so in
5356 memory of Jose Alejos.
