1818 AN ACT REQUIRING FOOD ALLERGY AWARENESS TRAINING IN
1919 RESTAURANTS.
2020 Be it enacted by the Senate and House of Representatives in General
2121 Assembly convened:

2323 That the general statutes be amended to require (1) food protection 1
2424 managers to (A) complete allergen awareness training, (B) include 2
2525 allergen awareness as part of their staff training, (C) establish 3
2626 guidelines for staff interaction with customers who have food allergies, 4
2727 and (D) incorporate the guidelines into the food establishment's 5
2828 standard operating procedures, (2) food inspectors at local health 6
2929 departments to complete allergen awareness training, and (3) class 2, 3 7
3030 and 4 food establishments to (A) retain records documenting certified 8
3131 food protection managers' completion of the required training and 9
3232 make the records available for inspection by the Department of Public 10
3333 Health or local health departments, (B) develop procedures for 11
3434 informing customers, upon request, of the all ingredients of standard 12
3535 menu items and the presence of major food allergens in its menu items, 13
3636 and (C) post in a clear and conspicuous manner on its menus and 14
3737 menu boards, a request that customers notify their server of any food 15
