AN ACT CONCERNING REPRESENTATIONS MADE BY FOOD SERVICE ESTABLISHMENTS REGARDING THE FRESHNESS OF FOOD ITEMS AND FOOD INGREDIENTS. Be it enacted by the Senate and House of Representatives in General Assembly convened: That the general statutes be amended to (1) define what constitutes a 1 "fresh" food item or food ingredient, (2) prohibit restaurants and other 2 food service establishments from inaccurately using the term "fresh" to 3 describe any food item or food ingredient, (3) require restaurants and 4 other food service establishments to disclose whether any food or food 5 ingredient has been frozen, preserved or processed, and (4) require the 6 Department of Consumer Protection to develop and provide relevant 7 guidance to restaurants and other food service establishments. 8 Statement of Purpose: To require restaurants and other food service establishments to accurately represent whether food items and food ingredients are "fresh".
