1717 A BILL TO BE ENTITLED
1818 AN ACT
1919 To amend Chapter 4 of Title 1 of the Official Code of Georgia Annotated, relating to

2121 holidays and observances, so as to provide that November 22 shall be designated "Kimchi2
2222 Day" in Georgia; to provide for legislative findings; to provide for related matters; to repeal3
2323 conflicting laws; and for other purposes.4
2424 BE IT ENACTED BY THE GENERAL ASSEMBLY OF GEORGIA:5
2525 SECTION 1.6
2626 The General Assembly finds that:7
2727 (1) Korea is the country of origin of kimchi;8
2828 (2) In 2013, the United Nations Educational, Scientific and Cultural Organization9
2929 officially recognized Korea's traditional process of preparation and preservation of kimchi10
3030 known as "kimjang" as an "Intangible Cultural Heritage item";11
3131 (3) Kimchi is an excellent source of probiotics, folate, beta-carotene, choline, potassium,12
3232 calcium, and vitamins A, C, and K. Many of these nutrients can contribute to lower rates13
3333 of stroke, cancer, diabetes, and heart disease, and to increased immunity;14
3434 (4) There has been a 222 percent increase in food products launched between 201415
3535 and 2018 with "Korea" or "Korean" in the product name. Korean cuisine has grown on16 23 LC 51 0251

3838 food menus in the United States since 2014, which can be attributed to the fact that

4040 Korean cuisine has been adopted in American and Mexican cuisine as kimchi is used as18
4141 an alternative to slaws, pickles, and sauerkraut; and19
4242 (5) In South Korea, November 22 is celebrated annually as "Kimchi Day."20
4343 SECTION 2.21
4444 Chapter 4 of Title 1 of the Official Code of Georgia Annotated, relating to holidays and22
4545 observances, is amended by adding a new Code section to read as follows:23

4848 November 22 of each year is designated as 'Kimchi Day' in Georgia."25
4949 SECTION 3.26
5050 All laws and parts of laws in conflict with this Act are repealed.27
