| 11 | 11 | | WHEREAS, Originally invented by British colonists in |
|---|
| 12 | 12 | | America, cobbler was the name given to any dish made by pouring a |
|---|
| 13 | 13 | | filling into a pan and covering it with batter, biscuits, or a pie |
|---|
| 14 | 14 | | crust before baking; fillings could be sweet or savory, ranging |
|---|
| 15 | 15 | | from apples, blueberries, and peaches to beef, mutton, and lamb; |

| 16 | 16 | | and |
|---|
| 17 | 17 | | WHEREAS, The name "cobbler" is thought to have been derived |
|---|
| 18 | 18 | | from the resemblance of the finished dish to a cobbled street, or |
|---|
| 19 | 19 | | from the fact that it is "cobbled" together from a variety of |

| 20 | 20 | | ingredients; the different types of cobbler all over the nation |

| 23 | 23 | | WHEREAS, Cobbler filled with delicious Texas peaches has |

| 24 | 24 | | become one of the signature desserts of the state; usually made very |

| 25 | 25 | | sweet, peach cobbler has become a summertime favorite, and a dish of |

| 26 | 26 | | cobbler with a single scoop of vanilla ice cream often serves as the |

| 27 | 27 | | perfect finish to any day; and |

| 28 | 28 | | WHEREAS, Many Texans prefer cobbler made with fresh peaches, |

| 29 | 29 | | and during peach season from mid-May to early August, Gillespie |

| 30 | 30 | | County becomes the center of the peach cobbler universe, producing |

| 31 | 31 | | 40 percent of the state's peaches, many of which are sold to |

| 32 | 32 | | travelers from stands along the highways outside Fredericksburg; |

| 34 | 34 | | WHEREAS, Whether served to beat the Texas heat or to |

| 37 | 37 | | generations, peach cobbler is one of the distinctive flavors of the |

| 40 | 40 | | RESOLVED, That the 83rd Legislature of the State of Texas |
