99 WHEREAS, All across the Lone Star State, perhaps no dessert
1010 is more welcome at the end of a meal than peach cobbler; and
1111 WHEREAS, Originally invented by British colonists in
1212 America, cobbler was the name given to any dish made by pouring a
1313 filling into a pan and covering it with batter, biscuits, or a pie
1414 crust before baking; fillings could be sweet or savory, ranging
1515 from apples, blueberries, and peaches to beef, mutton, and lamb;
1616 and
1717 WHEREAS, The name "cobbler" is thought to have been derived
1818 from the resemblance of the finished dish to a cobbled street, or
1919 from the fact that it is "cobbled" together from a variety of
2020 ingredients; the different types of cobbler all over the nation
2121 have gone by such colorful names as Brown Betty, the Grump, the
2222 Buckle, and the Sonker; and
2323 WHEREAS, Cobbler filled with delicious Texas peaches has
2424 become one of the signature desserts of the state; usually made very
2525 sweet, peach cobbler has become a summertime favorite, and a dish of
2626 cobbler with a single scoop of vanilla ice cream often serves as the
2727 perfect finish to any day; and
2828 WHEREAS, Many Texans prefer cobbler made with fresh peaches,
2929 and during peach season from mid-May to early August, Gillespie
3030 County becomes the center of the peach cobbler universe, producing
3131 40 percent of the state's peaches, many of which are sold to
3232 travelers from stands along the highways outside Fredericksburg;
3333 and
3434 WHEREAS, Whether served to beat the Texas heat or to
3535 complement a plate of Texas barbecue, whether prepared in a Texas
3636 roadhouse or from a treasured family recipe handed down through
3737 generations, peach cobbler is one of the distinctive flavors of the
3838 Lone Star State, beloved by Texans wherever they are in the world as
3939 a taste of home; now, therefore, be it
4040 RESOLVED, That the 83rd Legislature of the State of Texas
4141 hereby designate peach cobbler as the official cobbler of Texas.
